Our Organic unfiltered extra virgin olive oil “Mosto” is obtained from Taggiasca olives picked by hand in our olive groves and pressed according to the traditional method of crushing with the millstones; this metod is also called “first pressing” of the fruits. The main feature of our EXTRA VIRGIN olive oil is the sweetness and tenderness of the taste. The taste has clear notes of sweet with hints of almond and pine nuts. Our EXTRA VIRGIN olive oil is ideal for combination with raw or cooked vegetables, with fish and for the preparation of sauces (mayonnaise, Ligurian pesto, walnut sauce) or homemade desserts instead of butter

This unfiltered extra virgin must oil is obtained from Taggiasca variety olives grown in the upper Val Prino at 400 / 500 m above sea level following the organic farming method: absence of pesticides, herbicides, organic fertilization, mowing and manual harvesting . Our organic extra virgin olive oil is characterized by its sweet and delicate fruitiness, with notes of almond and pine nuts, an intense yellow color and a delicate taste with a decisive sweet sensation in the finish. Production and bottling at our mill in Via Ameglio 5 Pantasina Altitude: 400/500 m a.s.l Olive type: Taggiasca cultivar Parasitic fight using Kaolin Fertilization: 100% organic Harvesting: end of November/December, manual with beating. Extraction system: cold pressing by traditional mill with natural stone millstones. Colour: golden yellow with green reflections Smell: light fruity with pine nut sensations. Flavour: light fruity with notes of pine nuts, slightly spicy flavour, sweet on the finish. Total acidity: < 0.5% oleic acid. Appearance: Opalescent veil. Use:Ideal raw on raw and boiled vegetables, fish and bruschetta. In the kitchen for the preparation of sauces, gravy, focaccia and soft desserts.
